
Potato & Leek soup

Easy peasy creamy Potato and leek soup with chicken . You can replace chicken with ham or bacon or leave out completely I use it to add protein
Serves 3 portions.
Ingredients
10ml oil
1 large onion chopped
225g potato cut into cubes
2 large leeks thoroughly washed and thinly sliced
1.2 litres of vegetable stock more if you like a thinner consistency (2 stock cubes)
150ml half fat creme freche (optional for serving)
Salt and black pepper
Separate Cooked shredded chicken 150g, using 50g in each portion
Method
In a large pan heat your oil adding in your onion, potatoes and leeks, cook for 3-4 minutes. Add the vegetable stock and bring to the boil. Season with salt and pepper and simmer till the vegetables are tender but not too soft, unless you prefer it that way.
Whizz with a hand blender until smooth stir or keep some of it chunky , add in the creme freche and serve with chicken on top for extra protein
