This is my all time favourite dessert or snack
serves 1 portion.
will keep up to 1 month in the freezer
a great recipe that you can make ahead and keep to always have at hand when feeling the need for something sweet. Just increase the ingredients to batch make more than 1 portion
Ingredients
1 frozen banana, when freezing bananas I find taking the skin off and chopping into slices is better.
5g of natural smooth peanut butter
5g of dark chocolate chips, go for the small mini ones as you feel like your getting more
1/2 teaspoon of vanilla flavouring
80g of zero fat natural yoghurt ( to serve, optional)
5g of roasted chopped hazlenuts (optional to serve)
5g of 70% dark chocolate
Place your frozen banana, 1/2 the chocolate chips and vanilla in to a blender and whiz , don't over blend you don't want it runny, just smooth. Transfer it now to a container with the rest of the chocolate chips and add the peanut butter and give it a quick stir. you can melt the peanut butter a little before adding to spread it further place on the lid and let it set in the freezer. it takes no time to set,
when ready to eat, melt your dark chocolate I just pop mine in the microwave for 15 seconds (keep an eye on it the smell of burnt chocolate is not nice ), scoop it out into a bowl, top with Greek yoghurt, hazelnuts and drizzle over your chocolate. the chocolate hardens almost straight away with the coldness of the ice cream and yoghurt.
Alternatively to save more calories just have the ice cream with some sugar free jelly rather than with the yoghurt, nuts and chocolate, but the above way satisfies my sweet craving every time.
Enjoy
