Sausage casserole

This casserole dish is easy made, feeds up to 6 people and if there are leftovers can be used the next day , I doubt there will be though. The calories are based on serving 4 people and using reduced fat pork sausages. adjust calories for your substitutions (if you make any)

Serves 4 or 6 depending on how generous you are with portions
Ingredients
6 reduced fat pork sausages , if you want you use turkey sausages
440g of peeled potatoes
2 leeks , washed and finely sliced
2 large carrots peeled and sliced
1 onion chopped
3 garlic cloves sliced finely
a small bunch of chives , approx. 6 stems, to garnish, cut finely
1 teaspoon of dried thyme
1/2 teaspoon of sea salt
Large pinch of black pepper
500ml of vegetable or chicken stock
120ml of light single cream
80g of low fat cheese
Spray oil to grease
Method
Preheat the oven at 180C
First you want to parboil the potatoes by bringing a large pan of salted water to the boil, add the potatoes and cook for 10 mins, you don't want them cooked through as you will be slicing them, drain and leave to the side for now.
Put the sausages in your casserole dish (give it a few sprays with oil) and place in the oven for 12/15 minutes, just until the sausages are browning , you may want to give them a shake halfway through.
Whilst the Sausages are cooking heat a frying pan and fry off the onion, carrot and leeks. after 8 minutes add the garlic and fry for a further 2 minutes.
Cut the sausages up (not too small), add the contents of the frying pan to the casserole dish with the sausages, stock, thyme, salt, pepper ,cream and stir . Next with the parboiled potatoes, slice and layer on top evenly then sprinkle with cheese to cover the dish.
When ready to serve garnish with your chives and season more with salt and pepper if you need to.
