Tasty tuna cakes

This is a great dish for leftover mashed potatoes. it is very easy and they taste great. a very soft food so young children can also enjoy them


Ingredients

10ml of olive oil

250g of ready made mashed potatoes, without milk or butter

2 tins of tuna in spring water (200g drained), alternatively you can use salmon

1 spring onion finely sliced

1/2 red pepper finely sliced

40g of oats blended to a flour consistency, breadcrumbs can be used (keep these on a flat plate to coat)

1 lime cut in half and juiced

1/2 teaspoon of dried mixed herbs

1/2 teaspoon of dried thyme

1/4 teaspoon of sea salt


Method


In a bowl mix the tuna, lime juice, red pepper and herbs together. Add in the mashed potato and roll the mixture with your hands to shape them (burger like shape). add in the salt and coat evenly in the oat mixture.


Heat your pan, non stick, with the oil and place in the tuna cakes frying till both sides are lightly golden brown. these can alternatively be baked in the oven at 200C for 25 mins. I find it best spraying with oil and half way through cooking turn over spray the other side of each tuna cake and bake for the remainder time .


These are perfect accompanied with a coriander and lime salad with a dollop of low fat natural yoghurt on top and a pinch of black pepper
